Loved this simple recipe this season!
EASY COCONUT CAKE
* 1 package white cake mix
* 1 package INSTANT coconut pudding mix (vanilla will do if coconut can’t be found)
* 4 eggs
* 1 cup thick sour cream
* 1/2 cup + 2 Tbsp cup water
* 1 teaspoon coconut extract
* 1/2 cup melted butter
* 1 scant cup shredded sweetened coconut
CREAM CHEESE FROSTING:
* 8 oz cream cheese, softened
* 5 tablespoons butter, softened
* 1 teaspoon coconut extract
* 2 tablespoons milk
* 3 cups powdered sugar (a little extra if needed)
*** 11/4 to 1 1/2 cups toasted coconut (for topping after cooked)
DIRECTIONS:
1. Preheat oven to 350°
2. Combine all of the ingredients in a large mixing
bowl and mix well for 3-4 minutes.
Pour batter into well greased and lightly floured Bundt cake pan. Smooth top evenly with spatula.
3. Bake in preheated oven for about 40-45 minutes or until inserted toothpick comes out clean and top is lightly browned.
4. Cool in pan for 10 minutes. Loosen edges with butter knife. Put serving platter on top of cake, flip cake over. Let completely cool before frosting.
5. While oven is still heated, toast the coconut.
Place coconut in pie tin. Bake for 2 min. until coconut lightly begins browning on top. Remove from oven, toss, place back in oven and toast for another 2-3 min until browning. Watch closely so coconut doesn’t burn!! Remove from oven, toss & set aside.
6. Place all of the frosting ingredients in a medium size mixing bowl. Mix until creamy smooth. Frost cake. Generously sprinkle with toasted coconut. Pat against edges to get the coconut to stick.
Serve up and ENJOY!!! (chill leftovers)

San Pasqual

Have A special chef in your life?? Add a touch of old Mexico charm to your kitchen with Jan Barboglio’s San Pasqual Statue. It features San Pasqual figure created from weathered cast stone stone holding a hand forged fork, spoon, and bird, on a removable stand. Measures approximately 6” x 6” x 12”. San Pasqual Patron Saint of Kitchens is also the patron saint of cooks, sheep, shepherds, and Eucharistic congresses and affiliated associations.
Born into poverty as Paschal Baylon in 1540, San Pasqual Patron Saint of Kitchens lived a life of humble servitude. He often shared his food with the poor.
His commitment to the faith sent him to France, where he defended the Real Presence against heretics. He served as a shepherd, cook, porter, gardener, and alms beggar.
Many people claim to have witnessed miracles at his tomb. These miracles, paired with San Pasqual’s kindness and generosity towards the poor and sick, and his unwavering dedication to the Holy Eucharist, led to his canonization in 1690.
His feast is now observed annually on May 17.
This San Pasqual Saint statue is the perfect addition to any kitchen.

What is Moissanite?
Moissanite is a gemstone born from the stars. It was first discovered in 1893 by a French scientist named Henri Moissan, who later won the Nobel Prize in Chemistry. He discovered microscopic particles of the gem that would eventually bear his name in Arizona, in a crater created by a meteorite that fell to Earth. He initially thought that he had discovered diamonds, but later determined that the crystals were composed of silicon carbide. Moissanites exhibit a different kind of brilliance than diamonds do, as their faceting pattern is different. The fiery, rainbow flashes emitted by moissanites are beloved by some, but others feel that moissanite’s heightened brilliance can create a “disco ball” effect, especially in sunlight. The bigger the moissanite, the more likely it is that the difference will be noticeable. Moissanite has a refractive index from 2.65 – 2.69, which is higher than a diamond. Moissanite gemstones are a 9.25 on the Mohs Scale of Hardness, so they are suitable for everyday wear.
