Butterscotch Bars w/ our Mexican Vanilla

You have heard us talk about this special vanilla and we certainly think it is the best! Stop by our kitchen and pick up a bottle! It also makes a quick and easy gift for the cook in your circle. This recipe came straight from the distributors of this wonderful Mexican Vanilla!

 Butterscotch Bars
3/4 cup butter
1/2 cup brown sugar
1/2 cup white sugar
3 egg yolks
1 tsp. Mexican Vanilla (Pick Your Bottle Up At Bonnes Amies)
2 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 cup butterscotch chips
1 cup chopped nuts
1 cup coconut

Topping:
3 egg whites
1 cup brown sugar

Mix together butter, sugar, egg yolks, Mexican Vanilla, flour, baking powder, and salt. Mixture will be crumbly. Spread in bottom of 9x13 pan. Pat down with back of spoon. Sprinkle with butterscotch chips, nuts, and coconut. Slightly whip 3 egg whites and stir in 1 cup brown sugar. Spread egg white mixture on top, and bake at 350˚ for 35-40 minutes. Cool and cut into squares, or serve warm topped with ice cream or whipped cream.

Blueberry Cheesecake Squares

Headed to a July 4th party or Saturday evening cookout? These Blueberry Cheesecake Squares will sure to be a favorite dessert for everyone!

Ingredients
Cookie Crust:
1 3/4 cups all-purpose flour
1/2 cup confectioner's sugar
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
1 teaspoon ice water

Cheesecake Filling:
16 ounces (2 packages) cream cheese, softened
1/2 cup sugar
1 teaspoon pure vanilla extract
2 eggs
1 cup Wild Maine Blueberry Jam (Pick Your Jar Up At Bonnes Amies)

Directions
Preheat oven to 350° F. Grease a 9x13-inch pan.
Place flour, sugar and salt in food processor and pulse.
Add butter and process until the dough begins to form a ball, adding ice water if necessary.
Press dough evenly over the bottom of the prepared pan. Bake until crust is lightly golden, about 20 minutes. Let cool for 30 minutes.
While cooling, prepare filling. Mix softened cream cheese, sugar and vanilla until well blended.
Add eggs and mix just until eggs are incorporated.
After crust cools for 30 minutes, pour cheesecake filling evenly over the crust.
Spoon blueberry jam randomly on top of filling and then swirl to combine.
Bake for approximately 35-45 minutes or until center is set. Allow to cool in pan.
