Migas for Breakfast
This recipe is for a simple breakfast that is loved by many, including both children and adults. What makes Migas great is that they do not use many ingredients, are relatively quick and easy to make, and they make good use of tortilla chips(which we all have in our kitchen). People like mixing in some diced vegetables, like onion, tomato, jalapeños, black olives, and bell peppers. Although it’s not as common, you can also add diced potatoes to your migas.
Preheat oven to 350 degrees and grease 9×13 inch baking dish.
In large skillet, cook bacon pieces until almost crispy and add diced jalapeño/green chilis and onion. Cook over medium high heat until onion starts to soften.
Place crushed tortilla chips into baking dish and then layer with cooked bacon and onion mixture.
Whisk together eggs, milk, cream of tartar, salt, and black pepper and pour into baking dish.
Spread salsa over egg mixture and then sprinkle shredded cheese over top.
Cover with foil and bake for 30 minutes, then uncover and bake for 5 more minutes to brown cheese.
Remove from oven and garnish with cilantro, green onion, avocado, sour cream, and hot sauce. This is even better with Fresh Eggs from our shop kitchen and our yummy Peach Salsa!
